Blueberry French Toast
This is one of my family’s all time favorite breakfast dishes, and so easy. It’s always on the menu when the sons are home—poor hubby has to wait.
1 loaf Challah bread (or any dense bread)
3 eggs
3 Tablespoons sugar
1 teaspoon vanilla extract
2 1/4 Cups milk
1/2 Cup all purpose flour
6 Tablespoons dark brown sugar, packed
1/2 teaspoon cinnamon
1/4 Cup butter or margarine
2 Cups blueberries fresh or frozen
Diagonally cut bread into 1” slices and place in well-greased 9×13 inch baking dish
In a medium bowl, lightly beat eggs, sugar, and vanilla. Stir in milk until well blended. Pour over bread, turning pieces to coat well. Cover and refrigerate overnight.
Preheat oven to 375
In a small bowl or food processor combine the flour, brown sugar, and cinnamon. Cut in butter until mixture resembles coarse crumbs.
Turn bread over in baking dish. Scatter with blueberries. Sprinkle evenly with crumb mixture. Bake about 40 minutes until golden brown.
Cut into squares and serve with warm syrup (I mix a little orange juice in the syrup).
