Chili
Chili
Saute in 6 Tblsp olive oil:
2lbs better quality stew meat or steak cut into cubes
1lb hot Italian sausage, casing removed
4 cloves garlic, minced
2 large onions, chopped
2 red bell peppers, chopped
1C chopped celery
Add:
7C diced canned tomatoes
3tsp salt
1/4tsp paprika
1/4tsp cayenne
1Tblsp chopped fresh cilantro
2 bay leaves
3-4Tblsp chili powder
3Tblsp cumin
1C red wine
1/2 bottle of your favorite beer
1Tblsp brown sugar
1Tblsp vinegar
Bring to a boil, reduce heat and simmer for 2 hours.
Add:
4C kidney beans
Heat and serve.
I top the chili with some grated sharp cheddar cheese and a handful of Fritos. I’ve tasted chili with sour cream and avocado – IMO too many toppings hide the flavor of the chili – but to each his own.
