I made a few slight variations – as noted by the ***
2 carrots, peeled, and thinly sliced
2 granny smith apples, thinly sliced
2 zucchini , thinly sliced
1/2 pineapple, (I bought one already cleaned) sliced
1/3 – 1/2 white cabbage, thinly sliced
1/2 C fresh cilantro, chopped*** recipe calls for mint
4 green onions, sliced
sea salt and cracked pepper
I used a mandolin to thinly slice the veggies, then toss all in a bowl to mix.
1t Dijon mustard***recipe calls for hot English mustard
2T white balsamic vinegar
1/4C vegnaise***recipe calls for mayo(yuck!)
2t truvia***superfine sugar
Mix dressing, por over slaw and toss.
