Heavenly Chicken Salad
I’m sharing a recipe from a now closed restaurant that was once a favorite lunch place in Staunton. The most popular item on the menu was their Curried Chicken Salad, not a low calorie item – but a delicious occasional treat.
- 1 C mayo
- 4 Tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 cup cashews
- 2 Tablespoons honey
- 1 teaspoon curry powder
- 1/2 C sour cream
- 1 1/4 C celery
- 1 C diced pineapple
- 5 C diced chicken
- Combine all ingredients in a food processor. Pulse to desired consistency.
That’s it. At the Bake Shop it was served on a croissant, I always asked for a scoop on a tomato – to cut calories – HA!
I know my photo shows grapes – I didn’t have pineapple and needed a photo tonight 🙂
