Strawberry Nachos
Strawberries are one of the first fruits to come in season – they’re one of my favorite signs that spring is right around the corner. We typically keep them in the fridge and enjoy a bowl in the evening – Strawberry Nachos are a fun way to kick them up when we have kiddies around.
- 1 pint fresh strawberries
- 6 flour tortillas
- 2 Tablespoons butter
- 2 teaspoons cinnamon sugar (more if desired)
- Nutella – any amount you like
- Redi Whip – or my preference, fresh whipped cream
- The first step is to chop the fresh strawberries and sprinkle with a little sugar – let them sit a bit to form a little syrup.
- While they’re syruping, make some Cinnamon Sugar Tortilla Chips – sounds good already.
- Brush a flour tortilla with some melted butter and generously sprinkle with cinnamon sugar.
- Cut into wedges and place on a cookie sheet.
- Bake @ 350 for 10-12 min – cool.
- Now it’s time to build the nachos.
- Pile the chips on a serving platter.
- Distribute the strawberries randomly over the chips.
- With a fork, drizzle the Nutella over the berries – be generous.
- Top with a few dollops of Redi-Whip, a mint sprig here and there for pretty – and you’re ready to plop the plate in the middle of the table – yum!
