Cucumber Apple Salsa
This salsa is a wonderful accompaniment for chicken or pork tenderloin as well as, our choice, fish tacos. The recipe is so simple to make, it’s fresh and a little spicy.
- 1/4-1/2 teaspoon cinnamon chile spice
- 1 Granny Smith Apple, cored and chopped
- 1/2 English cucumber chopped
- 1 tablespoon fresh mint chopped
- 1/2 tablespoon honey or agave
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 cup rough chopped almonds
- Combine all, except almonds. Add almonds right before serving.
