On the menu this week I’m transitioning back into fall favorites. Additions to the menu that we don’t see in the spring and summer are the Roasted Root Veggies and sweet potatoes. The Soba Noodle Salad recipe is light, fast, and healthy – all good things. We’re passing on dinner at home due to a commitment – it will need to be something on the run, hopefully Trader Joes will take good care of us. The rest of the week should be easy and tasty with leftover for lunch the next day.

Tuesday: Herb Roasted Pork Tenderloin with Fall Roasted Veggies
Wednesday: Moroccan Rubbed Salmon with Baked Citru Sweet Potato
Thursday: Soba Noodle Salad with Shrimp
Friday: Italian Stuffed Bell Peppers
