After a week of meals based on the palate of a teen that doesn’t particularly care for the foods we eat on a regular basis, it was great to get back to a salmon/salad foe dinner. its so easy and light. Hubby is still adjusting to the oil and vinegar dressing, as opposed to ranch, but it i simply add it before he has a chance to get the ranch out, he doesn’t fuss too much.
In the salad….
Baby Field Greens
about 1/2 avocado, chopped*
about 1/2 peach (from a local orchard)*
about 1/4 cup black beans*
salmon fillet – it was baked in foil and topped with ginger sesame seeds
drizzle of fig balsamic vinegar
drizzle of lemon olive oil
* I say “about” because I have a little less and hubby has a little more
