Salmon with Pesto
Salmon with Basil Lime Pesto
Ingredients
- 4 salmon fillets
- Olive oil
- Sea salt and pepper
- 1iceburf, cut into rounds
- 2Cbasil leaves
- 1/2 C roasted peanuts
- 1/4 C lime juice
- 2T white wine vinegar
- 2cloves garlic. Crushed
- 1/2 C olive oil
Make the basil pesto by putting the ingredients in a food processor and press until thoroughly chopped set aside. Brush the salmon with oil and sprinkle with salt and pepper cook skin side down on a preheated hot barbecue for 45 minutes per side. Put on top of to let us rounds and drizzle with pesto.
