Chicken Marsala

This is a meal prep recipe. I eat one serving on the day I cook and have five additional servings for the week.

Chicken Marsala

Ingredients

  • 2 Cups cooked chicken breast

  • 1 large pack (or 2 small) sliced white or portabella mushrooms

  • 1 medium onion, sliced

  • 1 red bell pepper sliced

  • 1/2 block light cream cheese

  • Marsala cooking wine

Instructions

Saute the onions, mushrooms, and pepper until tender. Reduce heat. Stir the cream cheese as it melts and add the wine to create a sauce. Add the chicken and cook until warm. Spoon over rice.
