Chicken Curry
I make this Chicken Curry recipe for meal prep. I eat one serving on the day I cook and have five remaining for the week.
Chicken Curry
Ingredients:
I medium onion, chopped
2 gala apples, cubed
16 oz. fresh or canned pineapple chunks
16 oz, can diced tomatoes
1-2 Cups chicken broth (granular bullion with water is an easy sub)
2 Cups cooked diced chicken breast
2 tablespoons curry powder
Instructions
Saute the onion and apples until tender.
Add remaining ingredients and simmer for 30 minutes.
