Chicken Curry

I make this Chicken Curry recipe for meal prep. I eat one serving on the day I cook and have five remaining for the week.

Chicken Curry

Ingredients:

  • I medium onion, chopped

  • 2 gala apples, cubed

  • 16 oz. fresh or canned pineapple chunks

  • 16 oz, can diced tomatoes

  • 1-2 Cups chicken broth (granular bullion with water is an easy sub)

  • 2 Cups cooked diced chicken breast

  • 2 tablespoons curry powder

Instructions

  • Saute the onion and apples until tender.

  • Add remaining ingredients and simmer for 30 minutes.
